Serves 4
Ingredients
- ¾ cup cooked quinoa
- 400ml-can coconut cream
- 4 tbsp maple syrup
- ¼ cup goji berries, soaked
- in hot water to soften for 10 minutes
- ¾ tsp orange essence
- ½ cup vegan chocolate chips
Optional toppings
- chocolate sauce
- fresh orange slices
What to do
Blend cooked quinoa, coconut cream, maple syrup, drained, soaked goji berries and orange essence in a high-powered blender until smooth.
Transfer to a container and stir through the chocolate chips. Refrigerate overnight. Serve with chosen toppings or on its own.
