Ingredients
Chocolate & Orange:
- 1x 100g block Whittaker’s Orange Infused 33% Creamy Milk Chocolate
- 2 Tbsp coconut oil
- 1 tsp orange zest (zest of ½ orange) + extra to garnish
- 100ml cream
- 250ml thickened cream
- 5g / 2 tsp cocoa powder, for dusting
Hazelnut Praline:
- 60g / ¼ cup caster sugar
- 45g / ⅓ cup roasted whole hazelnuts
- Flaky sea salt, for sprinkling
Method
- Set aside three ramekins, dessert jars or serving glasses for the mousse.
- Roughly chop the orange chocolate and add to a medium heat-proof bowl, along with the coconut oil, orange zest and the cream. Microwave in 30 second bursts, stirring after each burst, until the mixture is smooth and combined. Set aside in the fridge for about 30 minutes, until cooled completely.
- In a medium bowl, beat the thickened cream with electric hand-held beaters, until it forms medium-stiff peaks (be careful not to over whip the cream, otherwise it will split).
- Fold the whipped thickened cream through the cooled chocolate mixture, until no streaks remain.
- Divide the mousse between the ramekins or glasses and set aside in the fridge, until ready to serve.
- Meanwhile, make the praline. Line a small chopping board with baking paper and set aside. Add caster sugar to a small saucepan and shake the pan so that sugar distributes into an even layer. Place over medium-high heat.
- Cook sugar, undisturbed, for about 2 minutes, until the edges of the sugar start to melt. Shake the pan again to redistribute the sugar. Cook for a further 1-2 minutes, until the sugar is melted and a golden amber colour (you can gently stir at this point). Quickly add the hazelnuts to the pan and toss to coat in sugar, working quickly. Immediately transfer mixture to the lined board.
- Sprinkle over a pinch of flaky salt. Set the praline aside to set, before breaking up into pieces.
- Serve the chocolate mousse dusted with the cocoa powder. Top with the hazelnut praline and some freshly grated orange zest, if desired.
