A twist on a Kiwi favourite, these Ranchslaw Hash Browns will soon be a staple recipe at your place
1 pack LeaderBrand Ranchslaw
1 medium kumara, grated
2 eggs
1/2 cup rice flour
1 tsp celery salt
2 Tbsp oil
Pepper to season
1 red chilli, sliced, to serve (optional)
Combine Ranchslaw, kumara, eggs, rice flour, pepper and salt in a bowl and mix well.
Heat a frying pan over a medium-high heat, add the oil and place tablespoonfuls of mixture into the oil, 4-5 at a time. Fry the hash browns for 3-4 minutes each side until golden brown.
Serve with the dressing from the Ranchslaw packet drizzled over the hash browns and top with sliced chilli if desired.
