Wendyl Nissen’s Bircher Muesli

This makes enough for two servings – keep refrigerated.

50 grams organic steel cut oats (Ceres Organics does a nice one)

1 washed apple with skin on, grated

20 grams raw nuts roughly chopped*

1 teaspoon chia seed

1 teaspoon flax seed

1 teaspoon sunflower seed

juice of ½ lemon

100 grams good-quality live natural yoghurt

100 grams good-quality live kefir

1 teaspoon Ceylon cinnamon**

Mix all ingredients together and then let sit in the fridge overnight. Serve with some in-season fruit on top like berries, feijoa, tamarillo or peach.

*I try to use New Zealand grown nuts which are fresh, like walnuts grown in-season or macadamia nuts. The nutritional value will be greater if they are fresh and haven’t travelled too far.

**Ceylon cinnamon is known as true cinnamon and contains many beneficial nutrients including antioxidants which can lower your risk of diabetes, heart disease and cancer.
