This simple, soothing tea is delicately spiced and easy to drink. Try a cup before bedtime or just when you need a bit of calm.

Serves 3
3 cups water
½ cup ginger, roughly chopped
2 tbsp dried chamomile
1 cinnamon quill
1 tsp honey
To serve
organic almond or rice milk, if desired (we used almond milk)
Place all ingredients in a small pot and bring to the boil. Simmer for 10-15 minutes to infuse. Strain into mugs and top with milk of your choice or with boiling water.
