Heritage tomatoes
Chunks of feta cheeseÂ
Fresh oregano
Lebanese cucumbers
Walnuts
Pomegranate seeds
FlowersÂ
VinaigretteÂ
1/3 cup lemon juice or white vinegarÂ
1/2 tsp Dijon mustard
1/2 tsp sea salt
Freshly ground black pepperÂ
Clove of garlic, choppedÂ
2/3 cup olive oi
2 Tbsp finely chopped Â
Fresh herbsÂ
Method
1. Whisk the lemon juice, mustard, salt, pepper and garlic together in a bowl then whisk in the oil in a stream till it’s all mixed in and smooth. Stir in the herbs.Â
 2. Arrange the salad ingredients in an artistic way on a flat platter and drizzle lightly with some of the vinaigrette at the last minute. Don’t drown the salad in vinaigrette – there should only be enough to just cover the salad. Vinaigrette will last for a week or more in the fridge.Â
