I love Christmas cake, but I am not in the mood for baking once the days heat up. These little delights are the perfect solution. Keep them in the fridge until you are ready to eat them.

Makes 12
Ingredients
- 2 cups ground almonds
- ½ cup dried cherries
- ¼ cup raisins
- ¼ goji berries, soaked in hot water to soften
- 2 tsp mixed spice
- zest of 1 orange
- 1 tsp vanilla
- 2 tbsp maple syrup
- 3 tsp brandy
Icing
- 100ml melted cacao butter
- 2 tsp maple syrup
- 2 tsp vanilla
- 12 extra goji berries, rolled into little balls
- sprinkle of matcha powder
What to do
Place all the bite ingredients into a food processor and blitz until mixture holds together. Roll into balls and freeze for around 1 hour.
Icing: Combine the cacao butter with the maple and vanilla.
Remove the balls from the freezer and dip one side of each into the icing liquid. Repeat this process around 5-6 times, until you get a nice coating on top.
Place the rolled goji berry on top and put back in the fridge to set. Lastly, sprinkle on the matcha for a touch of green.
