They are typically used in the cooking of soup, stock, stews or casseroles. Add your bouquet garni to your simmering bone broth or vegetable stock for a richer herb flavour. You can make your own bouquet garni using clean string or twine and a selection of strong fresh herbs.
You will need:
- Winter herbs you might include: bay leaves (stalks intact), rosemary spears, sage leaves, parsley, thyme or oregano
- A clean piece of string, about 20cm in length
- Kitchen scissors
Step one
Cut a piece of clean string (about 20cm in length) and set aside.
Step two
Choose a few stalks and leaves of each herb you wish to include and gather them together into a neat bundle.
Step three
Secure the bundle together by winding the string around the stalks and tying firmly.
Step four
Place your bouquet garni in the soup, stock, stew or casserole to simmer. Remove just before serving. Discard into your compost bin.
