Recipe Jenny Lomas from Aro Hā Wellness Retreat
2 cups young coconut meat (from about 3-4 young coconuts)
1/2 cup coconut water
1 capsule of probiotic
2 Tbsp coconut oil, melted
Open coconuts, scoop out the meat and retain the water.
Blend the meat with 1/2 cup of the coconut water until very smooth. (Pass through a fine sieve for a very smooth yoghurt – optional). Scrape into a bowl.
Open the probiotic capsule and tip the powder into the coconut blend. Stir.
Leave overnight at room temperature.
Return the fermented coconut to the blender and while blending at low speed pour in the melted coconut oil.
Add optional flavours, such as a few drops of vanilla or a little honey, or some fruit purée.
Store in the fridge.
