Love tacos? Here is a delicious, vegan-friendly alternative full of flavour and a kick!

1 tin of Ceres Organics jackfruit, drained, hard core removed, and shredded
1 tsp smoked paprika
2 tbs BBQ sauce
1 onion finely sliced
Tortillas or tacos
For the salsa
2 tomatoes, deseeded and finely diced
1 persimmon, skin removed and finely diced
1 spring onion, finely sliced
Juice of 1 lime
A handful of fresh coriander leaves
Salt and pepper to taste
Coconut yoghurt and fresh coriander to serve
Heat a little oil in a pan and cook the onion.
Add the jackfruit and cook a further 3 minutes.
Add the smoked paprika and BBQ sauce, stir through and simmer for 5 minutes.
Meanwhile, prepare the persimmon salsa by combining all of the ingredients and stirring through.
Warm the tacos or tortillas, whichever you are using, and build you taco!
Finish with a drizzle of coconut yoghurt and a sprinkle of fresh sprouts or coriander.
